1-Bowl Vegan Peanut Butter Cookies made with Oatmilk

 This the season for baking cookies, one of my favorite holiday activities. There is nothing that brings me more joy than baking cookies to share with friends and family. Although this year looks different, I still plan on baking all the goodies! Socially distant cookie swaps are one way we can stay connected and share the love while also avoiding an in-person gathering. One cookie I can’t get enough of this year is these vegan peanut butter cookies made with everyone’s favorite non-dairy milk—Oatmilk! 



I used Planet Oat Original Oatmilk, which is free from dairy, gluten, soy, and peanuts. There’s a flavor for everyone – ranging from Vanilla, Original, Extra Creamy, and Dark Chocolate! It has a full-bodied taste and creamy texture that can be enjoyed by everyone, every way, every time. Not only does it make the perfect addition to these cookies, but it pretty much pairs perfectly with them as well. What’s your favorite way to enjoy Oatmilk? 

1-Bowl Vegan Peanut Butter Cookies made with Oatmilk 

Ingredients: 

  • 1 cup almond flour
  • ½ cup natural peanut butter 
  • 2 Tbsp Planet Oat Original Oatmilk 
  • ¼ cup maple syrup 
  • Pinch of sea salt 
  • 1/3 cup chocolate chips 
  • 1 tsp coconut oil 
  • Flaky sea salt 

Directions: Preheat the oven to 350, and line your baking sheet with parchment paper. Combine almond flour, peanut butter, oat milk, maple syrup, and sea salt in a bowl. Using a tablespoon, roll and drop the batter onto parchment paper. With a fork press down the dough to create lines. Bake for 10-12 minutes until golden brown. Allow the cookies to cool. In your empty bowl, combine chocolate and coconut oil. Melt together in the microwave, until smooth. Dip each cookie into the chocolate and coconut oil mixture, and then sprinkle with flaky sea salt. Enjoy!!
