Almond, Walnut-Cashew Butter Cookies

 Cookies will always be my favorite dessert, as well as my favorite treat to bake! They require minimal ingredients, and they bake in a matter of minutes, so there’s no long waiting period between you and a warm cookie–straight from the oven!



These cookies are vegan and gluten-free, and make the perfect afternoon snack paired with hot or iced tea! Let’s get baking!

Almond, Walnut-Cashew Butter Cookies

Ingredients

1 cup + 2Tbs almond flour

1/3 cup walnut-cashew butter from GroundUp or sub with cashew butter

1/4 cup maple syrup or honey for a non-vegan version

1 teaspoon vanilla extract

1/4 teaspoon baking powder

Pinch of sea salt

Optional: Chopped Pistachios

Directions: Combine all ingredients together, and roll into balls. Press flat with a fork, and top with chopped pistachios. Bake at 350 for 10-12 minutes. Enjoy!
