Vegan Pistachio Pesto

 Who else is a fan of pesto? One thing I love is how versatile it is to make this delicious sauce! There are so many ways to make the pesto by switching out the type of nuts or greens for a slightly different taste and texture. Personally, I’m on a pistachio kick, and it adds a delicious nutty flavor! My family and I love tossing this sauce with chickpea pasta, roasted broccoli, and sautéd grape tomatoes.




Ingredients

1/2 cup packed basil

2 handfuls of baby spinach

2 Tbs lemon juice

3 Tbs olive oil

1/4 cup pistachios

2 garlic cloves

3 Tbs nutritional yeast

3 Tbs water

1/8 teaspoon sea salt

Directions: Combine all ingredients into a food processor and blend. Toss with your favorite pasta!
